Sometimes it feels like as soon as the calendar flips over to fall, it’s all pumpkin all the time.
Don’t get me wrong, I love me a pumpkin spice latte as much as the next gal, but there’s a world of winter squash out there, from nutty kabocha squash to brilliantly coloured turban squash to delicate spaghetti squash.
My most favourite one of all, though, is butternut, with its bright orange flesh and subtle sweetness. Most of the time, I’m happy to roast it in a hot oven with a little olive oil and salt until tender and caramelized, but sometimes it’s nice to change things up a little.

Sure, there's still lots of the good stuff that we love so much, but it's the butternut that's the real star of this show.

This satisfying vegetarian supper pairs butternut squash with a trio of root vegetables, exotic Moroccan spiced and chewy Israeli couscous for a gorgeous golden-hued dish that looks just like fall on a plate.
5. Squash and Lentil Salad with Feta
This hearty fall salad pairs sweet butternut squash with nutty lentils and creamy feta for a satisfying side dish that can easily do double duty as a vegetarian main.
