What you will need:
A highball glass
1 lime + garnish
Crushed ice or ice cubes
Follow these steps to make the perfect classic mojito.
1: Rim glass - Spread about 1/4 cup demerara sugar to cover the bottom of a shallow bowl. Use a lime wedge to moisten rim of glass. Turn glass upside down and press into sugar to coat rim.
2: Slice limes - Slice 1 lime into 8 thin wedges. Set 1 or 2 aside for garnish.
3: Place limes in glass - Place 5-6 lime wedges into the bottom of a highball glass.
4: Add sugar to taste - Sprinkle 1 tbsp of superfine sugar over the lime wedges.
5: Add a few mint leaves - Pick 6-7 fresh mint leaves from the stem and add to glass.
6: Muddle! - Using a 'muddler', muddle or crush the limes, sugar and mint leaves to a pulp.
7: Add rum - Measure out and add 1 1/2 to 2 ounces of white rum to glass.
8: Stir! - Stir with a long spoon to dissolve sugar.
9: Ice - Fill glass with crushed ice or ice cubes.
10: Top off - Fill glass with soda water.
11: Garnish - Garnish glass with a lime wedge and a couple fresh mint leaves.
12: Enjoy!- Sit back. Feet up. Drink. Ahhh.
