Sandwiches are just one of those things that are 1. Easy to make. 2. Super tasty and healthy and 3. Something most kids will eat. So it's no wonder that sandwiches have become a staple that many parents pack in their kid’s lunch box. But – as it's the start of a brand new school year – we say let's try to avoid getting stuck in the rut of making the same old boring sandwich again and again and again and, instead, try some fresh new recipes. So, from a toasted sesame bagel layered with herbed cream cheese and tomato slices to a super tasty roast beef and cheddar wrap, make lunchtime healthy and fun with these creative twists on a classic lunch staple.
1. Lettuce, Tomato & Guacamole
If your kid is an avocado-lover they will flip over this sandwich. Toast 2 slices of whole wheat bread. Top one slice with tomato slices, hearts of romaine leaves and mashed avocado (if you're worried about the avocado going brown, simply squeeze in a little fresh lemon or lime juice to prevent oxidation,) and press the other piece of bread over top. Cut into quarters and pack neatly into a lunch box container, along with an ice pack, before packing it into a cooler lunch bag.
2. Turkey, Havarti, Spinach & Hummus
We love this sandwich when it's made on a healthy grainy bread. Lay once slice of bread on a clean flat surface. Top with thin slices of oven roasted turkey, then havarti cheese slices and baby spinach leaves. Spread other piece of bread with hummus and place on top. Cut into wedges and pack neatly into a lunch box container, along with an ice pack, before packing it into a cooler lunch bag.
3. Roast Beef & Cheddar Wraps
Turning a classic sandwich into a wrap will perk up your child’s lunch. Lay a large whole grain tortilla on a clean flat work surface. Layer half of tortilla with mustard (or your child favourite spread), thin slices of roast beef, grated cheddar and your choice of cherry tomato halves, cucumber slices or red pepper slices. Roll up into a cigar and slice in half. Pack tightly into a lunch box container. along with an ice pack, before packing it into your cooler lunch box.
4. Herbed Cream Cheese & Tomato Bagel
We love this combo on a toasted sesame seed bagel. Simply slide a halved bagel in your toaster or under a broiler for a couple of minutes, until golden. Remove from oven and spread each side of bagel with herbed cream cheese. Top with thin slices of tomato and some fresh basil leaves. Sandwich together, slice in half and wrap in some parchment paper or pack into a lunch container.
5. Aged Cheddar, Apple & Fig Star-Shaped Sandwiches
Fruit and cheese are a natural pair. Place one slice of whole grain bread on a clean flat surface and top with slices of aged white cheddar. Core and thinly slice an apple (or a pear if your kids prefer them,) and toss with a squeeze of fresh lemon juice or orange juice to help prevent browning. Spread second piece of bread with a fig or quince spread or jelly. Sandwich together and use a star-shaped cookie cutter to cut out fun shapes. Pack in a lunch box container and add an ice pack to keep nice and chilled before packing in a cooler lunch box.
