Sandwiches. Most people love them, but, with all the advice these days to reduce the amount of bread we eat, are they becoming a thing of the past? Enter the open-faced sandwich. All the goodness (and tastiness) of a classic sandwich, with half the amount of bread. Genius? We think so and we're sharing our five favourite ways to make this hearty – yet healthy – breakfast, lunch, dinner (or even snack) alternative here.
1. Mini Cream Cheese, Smoked Salmon, Lemon, Dill
Toast a thick slice of sourdough bread and then cut into quarters. Spread each slice with plain or herbed cream cheese. Pile thin slices of smoked salmon on top and then top with freshly chopped dill. Our favourite part about this sandwich? It is not only a seriously tasty lunch or a light and flavour-packed dinner, but it makes for a sensational start to the day too.
2. Mashed Avocado, Cucumber, Tomato, Sprouts
Take one slice of grainy bread and top with 1 mashed avocado, thinly sliced cucumber, red onion, halved cherry tomatoes, sea salt and lots of freshly ground black pepper. Scatter with microgreens or sprouts if you like!
3. Hummus, Aged Cheddar, Turkey, Apple
This sandwich is a hit for adults and kids alike. Take one thick slice of grainy or flax bread. Spread 2 tbsp of your favourite store-bought (or, better yet, why not make your own!) over surface of bread. Top with thin slices of aged cheddar, thinly sliced granny smith apple and then mounds of oven roasted turkey. Sprinle top with sea salt and freshly ground black pepper and enjoy this protein-packed and flavourful sandwich!
4. Mesclun Greens, Avocado, Poached Egg
This is a sandwich that is perfect for breakfast, lunch or dinner. Toast one slice of multi-grain bread. Mound with a handful of your favourite mesclun greens or baby spinach. Thinly slice an avocado and lay over greens, pressing down slightly. Poach an egg (not sure how to poach an egg? Check out our handy guide here!) and then place carefully overtop of avocado slices. Sprinkle generously with sea salt and lots of freshly ground black pepper. Eat immediately!
5. Prosciutto, Gorgonzola, Arugula, Walnuts
Celebrating the seriously delicious combo of salty prosciutto with tangy gorgonzola, these prosciutto, gorgonzola + arugula crostini are a fast, fresh and delicious weeknight dinner! Simply toast or grill thick slices of sourdough bread, top with thin slices of prosciutto, 1 cup of crumbled gorgonzola (or any blue cheese you like), a handful of fresh arugula leaves and a sprinkle of chopped walnuts.
