Is your go-to lunch getting a little stale? Maybe it's time to switch up your PB & J for one of these super-fresh and super tasty sandwiches. From a twist on a classic (think a BTA (bacon, tomato & avocado) NOT a BLT,) to a crusty baguette brimming with basil pesto, buffalo mozzarella and ripe tomato, your lunch-time routine just got the rev it needs!
1. Bacon, Tomato & Avocado (BTA)
Upgrade your go-to BLT to a BTA (Bacon, Tomato & Avocado.) Toast thick slices of sourdough bread and spread lightly with butter or olive oil. Top one half of bread with crispy cooked bacon, thick slices of tomato and avocado. In a small bowl, stir together 1/4 cup mayonnaise, the zest and juice of 1 lemon, 1 tsbp finely chopped basil or parsley and pinches of sea salt and freshly cracked black pepper. Spread lemony mayo over 1 side of your second piece of bread and sandwhich together. Eat immediately!

2. Turkey, Havarti, Baby Spinach & Hummus
We love this sandwich on super grainy bread like this Granary bread from ACE Bakery. Lay once slice of bread on a clean flat surface. Top with thin slices of oven roasted turkey, then havarti cheese and baby spinach leaves. Sprinkle with sea salt and cracked black pepper. Spread other piece of bread with hummus and place on top.
3. Tomato, Pesto & Buffalo Mozzarella
We love a classic caprese salad, so we've made it into a stunning vegetarian sandwich! Take a large ball of buffalo mozzarella and slice it thickly. Pat dry on paper towels to get out excess moisture. Slice a baguette into a 6 inch-piece and slice in half lenthwise. Place under your broiler for 3 to 4 minutes to get it all golden. Remove from oven and spread a thin layer of your favourite basil pesto over each side. Top bottom half of baguette with thick slices of ripe tomato, then the buffalo mozzarella slices. Top with a handful of fresh basil leaves and sandwich together.
4. Smoked Salmon, Herbed Cream Cheese & Arugula
We love this sandwich on a toasted sesame seed bagel. Simply slide a bagel under your bagel for 3 to 5 minutes, until each half is golden. Remove from oven and spread each side of bagel with herbed cream cheese. Top with thin slices of smoked salmon, then baby arugula leaves.
5. Aged Cheddar, Pear & Fig Spread
Slice thick slices of your favourite honey flax or sprouted grain bread. Place one half on a clean flat surface and top with thick slices of aged white cheddar. Core and thinly slice a pear (or even an apple in a pinch,) and toss with a squeeze of fresh lemon juice (this will prevent browning.) Spread 2nd piece of bread with a fig or quince spread or jelliy. Sandwich together and enjoy immediately!
