We’ve created three quick, easy and healthy recipes to give you a little lunch box inspiration: Cheesy Turkey Quesadillas wedges, a Fresh Fruit and Berry Mix and, to keep energy levels high, a Dried Fruit and Granola Medley.
Preheat oven to 400 F. Line a large baking sheet with parchment paper and set aside.
Place a large tortilla on a clean flat work surface. Sprinkle half with about ¼ cup grated cheddar. Top with 2 turkey slices, cherry tomatoes, red pepper and avocado. Sprinkle with a little more cheese. Fold flour tortilla over ingredients to make a half moon shape. Carefully transfer to prepared baking sheet. Repeat with any remaining ingredients.
Transfer baking sheet to oven and bake for 10 to 15 minutes, until tortilla is golden and cheese is melted and bubbly. Remove from oven and let cool 5 to 10 minutes before slicing.
Pack wedges into a sealable lunch container and keep cool with an ice pack in a cooler lunch bag.
Cooled wedges will also keep well in an airtight container in the fridge for up to 1 day.
In a large bowl, stir together blueberries, kiwi, mango and strawberries. Add fruit cups, along with any juices that you like. Stir to combine well. Spoon fruit mix into individual lunch containers and seal. Pack in a cooler lunch bag.
Into a medium bowl, crumble or chop the granola bar so that it is in small bits. Stir in dried apricots and dried cranberries. Spoon into a small sealable lunch container and shake to combine ingredients well. Pack into a cooler lunch bag.
We used RubberMaid Lunch Blox containers and a Walmart water bottle and cooler lunch bag.
