Beating the mid-afternoon slump, one healthy snack at a time!

Let's talk about that mid-afternoon slump you feel around 3 o'clock. It kinda sucks doesn't it? We hear you. Which is why we've been on a mission to create some healthy, creative and flavour-packed snack ideas, which can work either as a lighter packed lunch or as a quick and healthy afternoon snack. We hate to even call this a 'recipe,' as it really is so easy. Simply drizzle some yummy grainy bread (or baguette if you prefer) with olive oil and throw it under the broiler to get all golden (in a pinch use your favourite cracker bread.) Then smear with soft goat cheese and top with alternating slices of fresh strawberries and figs. Drizzle with honey, sprinkle with some flaked sea salt, and —voila!— A perfectly delicious afternoon snack that will tame your tummy grumbles until dinner.
2 to 4 thin slices grainy dense bread or 1 thin French baguette
1 tbsp olive oil
1 cup soft goat cheese
1 cup sliced strawberries
1 cup sliced figs
2 tbsp honey
1 tsp flaked sea salt
Preheat oven to 400 F. If using grainy bread, cut crusts off bread and slice each piece in half. If using a baguette, slice in half lengthwise, then slice each into 4 pieces. Place on a parchment-lined baking sheet and brush tops lightly with olive oil. Bake for 6 to 8 minutes, or until bread is crispy and golden. Remove from the oven and allow to cool slightly.
Spread each piece of bread or baguette with a thin layer of goat cheese. Alternately layer strawberry and fig slices over top of the goat cheese. Drizzle with honey and sprinkle with sea salt.
TIP: If taking this to work for lunch, either make the bread ahead of time, or use your favourite cracker bread as your base!
