Think smoothie bowls have had their day in the spotlight? Think again. Sure, the smoothie bowl rage began in 2015, but that doesn't mean that they've lost their popularity now that we're in 2016. In fact, 'bowls' of all shapes, sizes and foods, are gaining in popularity (think vegan bowls, macro bowls, veggie bowls etc.) due to them being healthy, ultra-versatile & super easy to assemble. In any case, we're still obsessed with the breakfast smoothie bowl, and this recipe is one that we are seriously crushing on right now. A subtle, yet flavour-packed strawberry and banana smoothie layered with crunchy walnuts, fresh juicy figs, tart blueberries, flaky coconut and a drizzle of honey, if you like. Seriously delicious but seriously good-for-you too.

2 cups fresh strawberries, hulled and sliced
1/2 cup plain Greek yogurt
1/2 cup milk (1%, almond or soy)
1 scoop vegan protein powder (optional)
1 tsp pure vanilla extract
1 cup chopped walnuts
1/2 cup flaked or shredded unsweetened coconut
2 to 4 figs, sliced
1 cup fresh blueberries
2 tbsp good quality honey
To make smoothie, place strawberries, banana, yogurt, milk and vanilla in a high-powered blender. Blend until completely smooth and all ingredients are pulverized. Add more milk or water if necessary to achieve desired consistency. Divide smoothie between two bowls.
Top with any fruit or super foods you like. For this recipe, we chose chopped walnuts, coconut, fresh figs, blueberries and honey.
