Chocolate cake is one of the most irresistible sweets around. It's moist. It's fudgy. It satisfies our cake and our chocolate cravings, all at once. But, boy can it be a pain in the ass to make (sometimes). Well, lucky for you, we've created a recipe for a chocolate 'dump' cake (you know, you dump all the ingredients in a bowl, beat it together and voilà: a delicious cake emerges). This recipe is perfect for anyone who loves deep dark chocolate, but not too much sweetness and it's loaded with spicy chocolate flavour (thanks to a hit of ground cinnamon). Now, if you're someone who cannot get over the idea of eating a piece of cake, minus the chocolaty frosting, then by all means, go ahead and whip up a batch of our to-die-for chocolate ganache and drizzle it over the top. But we like it just how it is—still slightly warm from the oven, dusted with some icing sugar and sprinkled with a few berries.
1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 tbsp pure vanilla extract
2 1/4 cups all purpose flour
3/4 cup unsweetened dutch process cocoa powder
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 cup milk
1/2 cup plain Greek yogurt
Preheat oven to 350 F. Lightly butter or grease a bundt pan. Combine flour, cocoa powder, cinnamon, baking soda and salt in a medium bowl. Whisk to combine well and remove any lumps.
In the bowl of a food processor using the paddle attachment, or using an electric mixer, beat butter and sugar until light and fluffy, 3 to 5 minutes. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. With mixer on low speed, beat in milk and Greek yogurt until combined. Gradually add flour mixture and mix just until combined.
Transfer batter to prepared pan and smooth top using an offset spatula. Bake until springy and a cake tester comes out clean, about 50 to 55 minutes. Transfer to a wire rack to cool completely, then turn out onto wire rack. Top with chocolate glaze or dust with icing sugar if you like.
