Adorable (and seriously addictive,) we're sharing our favourite peanut butter cookie recipe!

Peanut butter cookiesare one of those things that spark wonderful memories from our childhood. Smooth, yet crumbly, sweet, but not too sweet and brimming with loads of peanut buttery taste, they are a hit with kids and parents alike. Our recipe is a classic one, however to entice little fingers and tummies, we have made them mini (but of course feel free to make them any size you like.) Adorable and seriously addictive, we promise they won't last long!
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp sea salt
1 1/2 cups smooth peanut butter
1 cup packed brown sugar
9 tbsp unsalted butter, at room temp
1 large egg
1 tsp pure vanilla extract
Preheat oven to 350 F. Line a large rimmed baking sheet with parchment paper and set aside.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, using an electric mixer, beat together peanut butter, brown sugar and butter until smooth and creamy, about 2 to 3 minutes. Beat in egg and vanilla, scraping down sides of bowl as necessary. Gradually beat in flour mixture, until just combined.
Pinch off 1 tbsp portions of dough and roll into balls using your hands. Place balls 2-inches apart on prepared baking sheet. Use a fork to flatten.
Bake for 12-15 minutes, or until cookies are golden and cooked through.
