Yep, chicken fajitas can be healthy!

When most of us think of Mexican food (like quesadillas, nachos, fajitas and enchiladas), we too often think of them as being unhealthy, loaded with heavy ingredients and a 'guilt-food' that we should only indulge in once in a blue moon. But, the fact is, if you steer clear of Taco Bell, and choose instead to make this style of recipe at home, it's actually super easy to lighten things up and create a healthy version of some of our favourite Mexican-inspired dishes. Take this recipe for healthy chicken & avocado fajitas. They have all of the flavour and punch that typical fajitas have, but they are way healthier. How have we achieved this? It's easy. We've simply steered clear of the loads of sour cream and grated cheese that make up most fajitas recipes and instead used herbs, fragrant spices and fresh veggies like cherry tomatoes and avocado. The result? A delicious and healthy dinner you can eat any time you like.
4 skinless, boneless chicken breasts, thinly sliced
1 red pepper, seeded and thinly sliced
1 yellow pepper, seeded and thinly sliced
1 tsp smoked paprika
1 tsp ground cumin
1 tsp flaked sea salt
Juice of 1 lime
1 tbsp olive oil
4-6 large whole grain or flax tortilla shells
1 cup halved cherry tomatoes
1 avocado, diced or mashed
1 small red onion, very thinly sliced
Handful fresh basil leaves
Place chicken strips and pepper strips into a shallow casserole dish. Sprinkle with paprika, cumin and salt and drizzle with lime juice and olive oil. Use tongs to toss to coat chicken and veggies evenly.
Heat a large non-stick skillet over medium-high heat. Add chicken and veggies and cook, tossing often, until chicken is completely cooked through and veggies are starting to caramelize, about 10 to 12 minutes.
Lay flour tortillas out on a clean flat surface. Spoon some of the chicken and pepper mixture in the centre of each fajitas shell. Top with cherry tomatoes, diced avocado, red onion and fresh basil leaves. Roll fajitas up like a cigar and serve immediately.
