Quick and easy, this toast is perfect for a light and healthy summer dinner!

Move over avocado toast. Our summer-inspired herbed ricotta and tomato toast is set to become your go-to breakfast/lunch/dinner/snack this summer. And really, it couldn't bea easier to make. Simply stir together (we like full-fat) ricotta cheese with your favourite chopped fresh herbs (basil, thyme, mint or even parsley will do,) the zest of 1 lemon and pinches of sea salt and freshly cracked black pepper. Smear across thick slices of toasted grainy bread and top with ripe cherry tomatoes. Finish with a drizzle of extra-virgin olive oil and a sprinkle of sea salt and you've got a quick and healthy meal your whole family will love.
11/2 cups ricotta cheese
2 tsp finely chopped fresh herbs (we like thyme, parsley or basil)
Zest from 1 lemon
pinches of sea salt and freshly cracked black pepper
4 thick slices multi-grain bread
1 cup sliced cherry tomatoes
Olive oil for drizzling
Sea salt for sprinkling
In a medium bowl, stir together ricotta, herbs, lemon, salt and pepper. Set aside in fridge until ready to use.
Toast bread in a toaster or alternatively, place slices of bread on a baking sheet and place under the broiler for 2 minutes, until toasted.
Place toast on a clean flat work surface and spread each with ricotta mixture. Layer with tomato slices. Drizzle each with olive oil and sprinkle with sea salt and freshly cracked black pepper. Serve immediately.
