Forget beef, these adorable sliders are made with shrimp!

So, you're craving a burger. But, it's mid-week, and you don't want to fall off your healthy eating kick, again. What's a person to do? First of all, don't fret. And second of all, keep reading because we've created a recipe that's perfect for anyone facing this dilemma: Shrimp sliders with a seriously tasty cabbage slaw and a ridiculously-easy-to-make avocado lime mayo. We promise, you will not be thinking about that beef burger once you've sunk your teeth into one of these babies.
1/2 red cabbage, shredded
1/2 Chinese cabbage, shredded
2 tbsp rice wine vinegar
2 tsp soy sauce
2 tbsp canola oil
zest and juice of 1 lime
Avocado Lime Mayo
1/3 cup good quality mayonnaise
1 ripe avocado, peeled, seeded and chopped
Juice and zest of 1 to 2 limes
1/4 tsp each sea salt and pepper
1 1/2 lbs large raw shrimp, peeled, deveined and tails removed
1 tbsp olive oil
1 tsp smoked paprika
12 mini hamburger buns, split
To make cabbage slaw, combine red cabbage, Chinese cabbage, rice vinegar, soy sauce, canola oil, lime juice and lime zest in a bowl. Toss to coat well. Reserve in the fridge until ready to use.
To make avocado lime mayo, in a small bowl, stir together mayonnaise, avocado and lime juice. Season to taste with sea salt and freshly cracked black pepper. Reserve in the fridge until ready to use.
In a large bowl, toss cleaned, peeled and deveined shrimp with olive oil and smoked paprika until well coated. Heat a large skillet over medium-high heat. Once hot, add shrimp and cook, turning occasionally, until bright pink, opaque and cooked through, about 5 to 7 minutes (timing will depend on the size of your shrimp).
To assemble sliders, place bottom half of buns on a clean surface. Top with 2 to 3 shrimp and a small handful of cabbage slaw. Spread 1 to 2 tbsp of avocado lime mayo over the top half of your burger bun and sandwich on top. Use a toothpick to secure if you like. Serve immediately with any extra slaw on the side if you like!
