Elevate your morning bagel.

Bagels are a great way to start your morning. But they can get a little ho-hum when they're simply spread with some plain cream cheese (or peanut butter and jam if that's your thing). So we decided to elevate this morning staple to something a little more special (and tasty). Simply lighty toast a whole grain bagel (because it's way healthier than your go-to sesame or poppy seed), then spread with a homemade lemon and herb cream cheese and layer with delicate slices of smoked salmon, ripe tomatoes and a handful of mixed greens. We promise, the extra time it takes you to make it, will be well worth the two minutes of extra effort.
Lemon & herb cream cheese:
1 cup cream cheese
Zest and juice of 1 lemon
1 tbsp finely chopped fresh herbs like basil or chives
Pinch of sea salt and freshly ground black pepper
2 whole grain bagels
6 slices smoked salmon
2 ripe tomatoes, sliced
Handful mixed greens
In a medium bowl combine cream cheese, lemon zest, lemon juice, herbs, salt and pepper. Stir to combine very well. Reserve in fridge until ready to use.
Slice bagels in half and toast lightly if you like. Spread bottom half of each bagel with cream cheese. Top each with 3 to 4 slices of smoked salmon, then tomato slices and mixed greens. Place top half of bagel on each and press down. Serve immediately.
