Making any pasta dish is almost fool-proof, but making a pasta all in just one pot takes 'fool-proof' to the next level.

Sure, most of us would call pasta about as fool-proof as it gets in the kitchen. But, did you know that there is an even easier way to make it? Enter the One Pot Pasta. What is it you ask? Simply throw all of the ingredients into a large pot, add enough water to cover (about 4 1/2 cups), bring it to a boil, then simmer for 10 minutes, and voilà. A complete pasta (and meal) that has been made entirely in just. one. pot. No sloppy, messy draining necessary. Now how's that for fool-proof?
1 lb spaghetti
1 lb cremini or button mushrooms, sliced thin
2 medium zuchinni, sliced thin and quartered
2/3 cup peas
2 sprigs fresh thyme
1/3 cup grated Parmesan cheese
¼ cup heavy cream
4 ½ cups water
Salt & pepper to taste
In a large pot combine spaghetti, mushrooms, zucchini, peas, thyme and water over medium heat. Season with salt and pepper to taste.
Bring to a boil and then reduce heat and simmer, uncovered, until pasta is cooked and liquid has reduced and almost been completely absorbed, about 8 – 12 minutes. Stir in cream and cheese. Serve immediately with lots of freshly grated Parmesan cheese.
TIP: Pair this super easy pasta with any green salad and some fresh baguette for mopping up the juices.
